Tuscan Style Minestrone

My favorite traditional Italian soup taken up a notch by adding one simple thing! Inspired by the culinary capital and my favorite place on earth- Tuscany!


  • 3-4 Italian Sausages (Pork or Chicken), removed from casing
  • 4 green onions
  • 2 garlic cloves
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 bell pepper (Orange, red or yellow)
  • 1 medium zucchini
  • 1 cup Tuscan kale
  • 1 cup spinach
  • 1 cup diced sweet potato
  • 1 cup fresh green beans
  • 1 cup cauliflower
  • 1 can diced tomatoes
  • 2 cartons of broth (Chicken or Vegetable)
  • 1 can red kidney beans, washed and drained
  • 1tbsp olive oil
  • 1/4 cup fresh parsley
  • salt & pepper to taste
Tuscan style minestrone soup


  1. Wash and chop all vegetables
  2. In a large pot, brown the sausages with olive oil, add garlic, carrots, celery and peppers. Let cook while stirring for 2 minutes
  3. Add can of diced tomatoes, stir and cook for another minute
  4. add remaining vegetables, stir for another minute
  5. add broth and kidney beans
  6. add salt, pepper and parsley
  7. bring to a boil, then lower heat to low and let it cook for 30-45 minutes
